A great RV meal salad -Greek Sardines

Personally I have never really thought of sardines as
 having the "yum" factor, but the following was really
 really good.

Craig is a bit of a "Foodie."  He can't seem to pick up a food
 section of the newspaper or a magazine without reading the
 recipes.  This months issue of Eating Well magazine has some
 really interesting salads. We tried this one last night and I 
thought, it would be a great RV meal.  Easy, quick to make,
 and ingredients that are easy to buy or store.


GREEK Salad with sardines 
INGREDIENTS:
  • 3 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon freshly ground pepper
  • 3 medium tomatoes, cut into large chunks
  • 1 large English cucumber, cut into large chunks
  • 1 15-ounce can chickpeas, rinsed
  • 1/3 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons sliced Kalamata olives
  • 2 4-ounce cans sardines with bones, packed in olive oil or water, drained
  • Wisk lemon juice, oil, garlic, oregano and pepper in a large bowl until well combined.  Add tomatoes, cucumber, chickpeas, feta,onion, and olives.  Gently toss to combine.  Divide the salad among 4 plates and top with sardines.  We divided it into two meal size servings and served with Stella Dora Bread Sticks.

  1. Everything sounds good except the sardines! I know I couldn't stomach them. :(

  2. Didn't think I'd like them either, but I notice there were several kinds at the grocery. Low cost from Bumble Bee and higher cost that were imported from Italy. Since the higher price ones were only $3.69 I choses them. They were quite alright. Not fishy at all, and it is said they are very good for you.
